Chicken adobo is a traditional Filipino dish known for its savory and tangy flavors. It's relatively easy to cook and requires just a few key ingredients. Here's a step-by-step guide on how to make chicken adobo:

Ingredients:
  • 2 lbs (900g) chicken pieces (thighs and drumsticks work well)
  • 1/2 cup soy sauce
  • 1/2 cup vinegar (cane vinegar or white vinegar)
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 1 teaspoon whole black peppercorns
  • 3 bay leaves
  • 1 tablespoon cooking oil
  • 1 cup water
  • Salt to taste

Instructions:

1. In a large bowl or ziplock bag, combine the chicken pieces, soy sauce, vinegar, minced garlic, and black peppercorns. Mix well, ensuring that the chicken is well coated. Let it marinate for at least 30 minutes, but for better flavor, marinate overnight in the refrigerator.

2. Heat a large skillet or pot over medium heat. Add the cooking oil and sauté the sliced onion until translucent.

3. Remove the chicken pieces from the marinade, reserving the marinade for later use. Add the chicken to the skillet with the onions, and cook until lightly browned on all sides.

4. Once the chicken is browned, pour the reserved marinade into the skillet, followed by the water. Add the bay leaves and bring the mixture to a boil.

5. Reduce the heat to low, cover the skillet, and let it simmer for about 40-45 minutes or until the chicken is tender and fully cooked. Stir occasionally to ensure even cooking and prevent sticking.

6. After the chicken is cooked, remove the lid and let the sauce reduce and thicken for another 10-15 minutes. Adjust the seasoning by adding salt to taste.

7. Once the sauce has thickened to your desired consistency, remove the bay leaves, and your chicken adobo is ready to be served.

Chicken adobo is typically enjoyed with steamed rice. You can garnish it with chopped spring onions or cilantro for added freshness. Leftovers can be stored in the refrigerator for a few days, and the flavors often deepen over time.
