Yes, you can use the Registry Editor to customize the pinned apps in the Start menu in Windows 11. Here are the steps:

1. Press the Windows key + R to open the Run dialog box. Type "regedit" and hit Enter to open the Registry Editor.

2. In the Registry Editor, navigate to the following key:

HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\StartPage\Favorites

3. Under the Favorites key, you will see a list of subkeys that represent the pinned apps in the Start menu. Each subkey will have a name that is a combination of letters and numbers.

4. To add a new pinned app to the Start menu, right-click on the Favorites key and select New > Key. Give the new key a name that is a combination of letters and numbers.

5. Select the new key you just created and double-click on the (Default) value in the right-hand pane. In the Value data field, enter the path to the executable file for the app you want to pin.

6. To remove a pinned app from the Start menu, simply delete its corresponding subkey under the Favorites key.

7. Once you have finished customizing the pinned apps in the Start menu, close the Registry Editor and restart your computer.

Note that editing the registry can be dangerous if not done properly, so be sure to create a backup of your registry before making any changes.
