We should say “All these” because the preposition “of” would mean that only some of these were being referred to.
Examples:
When referring to an unknown quantity of items only by using a pronoun it is necessary to use the preposition “of,” as in: (question) “How many of the flowers are beautiful?” (answer) “All of them.” We can’t say “All them.”
Examples:
- We should say “Two of these flowers are wilting,” not “Two these flowers are wilting.”
- We should say “All these flowers are beautiful” or “All are,” not “All of these flowers are beautiful.”
