Here’s what you need:
1 baking potato
1 tbsp sour cream
Handful of mozzarella
1) Prick the potato all over with a fork and microwave for 15 minutes.
2) Cut in half when cooking through and spoon out the flesh, leaving a small layer behind in the shell.
3) Mix the scooped out flesh with the sour cream, salt and pepper. Stir in the pepperoni.
4) Spoon the flesh back into the shells. Layer the pizza sauce, mozzarella, parmesan, more pepperoni and oregano on top of the flesh (in that order) and bake for 15 minutes at 180°C until the cheese is melted and pepperoni crispy.
