IMO,
Pros:
Mediatek
•Bang for the buck for its performance
•Nowadays, can handle most games
Snapdragon
•Drivers are open source, so custom ROMs are easy to develop (ever heard of a Poco F1 running Windows 11, and play Crysis 2?)
•Adreno GPUs usually have more GPU extensions (specifically, OpenGL ES and Vulkan), meaning emulators and other GPU reliant apps (ex: Kirikiroid2, Exagear) will greatly benefit from this.
•They focus more on lowering die size, so generally they're energy efficient (except for 888 and 8G1)
Cons:
Mediatek
•MediaTek doesn't provide drivers as open source, meaning custom ROM development is very limited.
•Held back by its infamous history, being a "toaster"
Snapdragon
•Slightly less performance compared to other SoCs of similar caliber
•(placeholder)
Now, that doesn't mean na never nagka custom ROMs ang MediaTek. Actually, my device (Realme 6) has custom ROM support. So, if you want custom ROMs, choose Realme (IDK about Xiaomi, pero meron naman sila custom ROM din tulad ng Redmi Note 8 Pro) or any other brand that releases kernel trees
