Fruity Maja Blanca


Ingredients:

2-3 pc pandan leaves
1/4 cup water
3/4 cup cornstarch, dissolved in 1-1/2 cups buko water
1 pc buko/young coconut, shredded, reserve buko water
1/2 cup all purpose cream
1 cup coconut cream
1/3-1/2 cup sweetened condensed milk
1 can/432g fruit cocktail, drained, reserve 2 tbs syrup

Procedure:

Boil then simmer pandan leaves, water and reserved fruit cocktail syrup in covered pan for 5 minutes.

Remove pandan leaves then add cornstarch mixture and buko.
Cook over low heat with continous stirring for 10 minutes.

Add buko, fruit cocktail, all purpose cream, condensed milk and coconut milk

Cook, stirring continously, for 15 more minutes or until the mixture separates from the spoon and pan.

Pour into an 8x8 pan.
Sprinkle 1/4 cup of fruits and press slightly into the maja.
Chill to set before cutting. Enjoy!

Makes 16 servings.
